Tagliatelle with feta cheese, tomato and pistachios

This recipe of noodles with feta cheese, tomatoes and pistachios is very easy, quick to prepare, it is super tasty and is perfect for the days when we do not have much time to get into the kitchen.

We only need a pot to cook the noodles, a bowl to mix all the ingredients and ready, we will have a lunch or dinner ready in maximum 20 minutes.

This is a recipe that was born when my son arrived from school and I from work bent from hunger and we did not have time or desire to cook, all we wanted was to fill the quick belly to get out again.

We had prepared the noodles at home a few days before, so the work was already done.

Ingredients

  • 120 gr. of noodles

  • 250 gr. of ripe tomatoes

  • 120 gr. feta cheese

  • 20 gr. of pistachios

  • 1 tablespoon olive oil

  • fresh chives or chives to decorate

  • salt and pepper to your liking

  • flaked chili or cayenne pepper to your liking

PREPARATION:


Cook the noodles according to the package instructions.

While the noodles are cooking, cut the tomato and feta cheese into cubes of approx. ½ cm., Take the pistachios out of their shell and place everything in a large bowl.

When the noodles are ready, drain all the water and pour them immediately into the bowl along with the other ingredients.

Mix well, add a dash of olive oil and seasonings with salt, pepper and if you like spicy, add chili flakes or cayenne pepper.

Serve and decorate with fresh cuttlefish or chives.
