• 3 eggs

  • 180 g of sugar

  • 250 g flour 00

  • 130 g of water

  • 130 g of seed oil

  • 1 sachet of baking powder

  • 2 tablespoons of bitter cocoa

  • aroma to taste, I lemon peel

  • a non-stick pan, I used a 22 cm pan

  • 1 lid as large as the pan

  • icing sugar to taste



Whip the eggs with the sugar, they must be beautifully swollen, add the oil, water, aroma, flour and yeast. Do not add more flour, the dough must be so liquid. Grease and flour the pan , pour one part of the dough and the other, add the bitter cocoa, mix and add everything on top of the white one.


Put the pan on the smallest stove you have on a moderate flame, neither very low nor even very high, otherwise you will burn everything Cover with the lid and cook for about 40 minutes.

Adjust yourself, every now and then lift the lid and check it, try the toothpick. Many people who made it, say to turn it halfway through cooking, as if it were an omelette but, since my friend does not recommend it, I did as she did, I cooked it without turning it. Once cooked, sprinkle with icing sugar.
